1. Fill up the reservoir water tank with fresh, cold water before heading out for a day of hot dog sales.
2. The reservoir water tank supplies the blue tap with water. It also supplies a pipe that runs down and around the burner where the fresh water is then heated. The hot water pipe goes back to the red tap where the hot water comes out.
3. The waste water (anything that goes down the sink drain) is held in a lower tank. At the end of the day this waste can be disposed of and the tank rinsed clean.
